Pumpkin Cookies

INGREDIENTS

    • 1 cup butter, room temperature
    • 1/2 cup sugar
    • 1/2 cup firmly packed brown sugar
    • 1 cup canned pumpkin
    • 1 egg
    • 1 teaspoon vanilla extract
    • 2 cups flour
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • 2 teaspoons cinnamon
    • 1 teaspoon all spice
    • 1/4 teaspoon salt

    PENUCHE GLAZE

    • 3 tablespoons butter
    • 1/2 cup firmly packed dark brown sugar
    • 1/4 cup milk
    • 1 1/2-2 cups confectioners' sugar


DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Have ready some ungreased baking sheets.
  3. In a large mixing bowl, cream butter and the sugars together until light and fluffy.
  4. Blend in pumpkin, egg and vanilla extract.
  5. In separate bowl, stir together flour, baking soda, baking powder, cinnamon and salt.
  6. Mix flour mixture into butter-sugar mixture.
  7. Drop tablespoonfuls 3 inches apart on ungreased baking sheets.
  8. Bake the cookies for 10-12 minutes until golden around the edges.
  9. Remove warm cookies and transfer to racks.
  10. Let cool completely for a least one half hour, then frost with glaze.

For Glaze:.
In a medium saucepan, heat butter and brown sugar over medium heat until bubbly. Cook, stirring constantly, for one minute or until slightly thickened. Beat in the milk. Blend in confectioner's sugar until the glaze is smooth and spreadable. Using a silicone basting brush, which I love and use religiously now, or a butter knife to spread glaze on cookies is the best tip. Please note; this glaze will harden fairly quickly. I suggest that you keep the saucepan over the stove on the lowest heat possible to prevent it from hardening.

Pumpkin Chocolate Chip Cookies

Ingredients:
1/2 cup butter
1 1/2 cups white/brown sugar
1 egg
1-1.5 cup canned pumpkin
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon pumpkin spice
1/2 cup chopped walnuts (optional)
1 cup semisweet chocolate chips
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a large bowl, cream together the shortening and sugar until light and fluffy. Beat in the egg, then stir in the pumpkin and vanilla. Combine the flour, baking powder, baking soda, salt, nutmeg, and cinnamon; gradually mix into the creamed mixture. Stir in the walnuts and chocolate chips. Drop dough by teaspoonfuls onto the prepared cookie sheets.
3. Bake for 15 minutes in the preheated oven, or until light brown. Cool on wire racks.

Chocolate Snowcap Cookies

6 oz dark chocolate, chopped (or chips)
1/2 cup (1 stick) butter
1 cup brown sugar
 2 eggs
1 tsp vanilla extract
3/4 cup all-purpose flour
1/3 cup cocoa powder
1 1/2 tsp baking powder
1/4 tsp salt
1 cup powdered sugar (approximate)

In a heat proof bowl, melt the chocolate in the microwave (stirring every 30 seconds) or over a double boiler.  Let the chocolate cool slightly while you cream together the butter and sugar until light and fluffy (you can use a stand mixer or do this by hand).  Add the eggs to the butter mixture one at a time until combined and stir in the vanilla. Once the chocolate is not too hot, stir into the wet ingredients.  Carefully stir in the flour, cocoa powder, baking powder and salt until everything is just mixed together.  The dough should be fairly stiff.  Chill the dough for at least an hour in the refrigerator.  When you take the dough out of the refrigerator, preheat the oven to 350°F.  Use a small scoop or two spoons to form small balls of dough.  Roll each cookie in the palm of your hands until it is a smooth circle.  Coat the cookies very well with powdered sugar and place on a parchment or silicone mat lined baking tray.  Bake cookies for 12 minutes, let stand on the cookie sheet for 2-3 minutes, and move to a wire rack to cool completely.

Chai Spiced Sugar Cookies


YIELD: About 3 dozen cookies
PREP TIME: 15 minutes
COOK TIME: 

INGREDIENTS:

2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups white sugar
2 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cardamom
1/2 teaspoon ground allspice
1/4 teaspoon finely ground black pepper
1 cup unsalted butter, softened
1 egg
1/2 teaspoon vanilla extract

DIRECTIONS:

1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper; set aside.
2. In a large bowl, sift together flour, baking soda, baking powder and salt. Set aside.
3. In a medium bowl combine sugar, cinnamon, ginger, cardamom, allspice and black pepper. Remove 1/4 cup of the sugar-spice mixture, set aside to reserve for rolling the cookies.
4. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, beat the butter and sugar-spice mixture until light and fluffy, about 3 minutes.
5. Beat in egg and vanilla extract, combine until fully incorporated.
6. Slowly blend in dry ingredients mixing until just combined.
7. Using a small scoop (2 teaspoons) roll dough into balls and then into the reserved sugar-spice mixture. Place dough balls on prepared baking sheet about 1 1/2 inches apart.
7. Bake in preheated oven for 8 to 10 minutes.
8. Let stand on baking sheet two minutes before removing to cool on wire racks.

NOTES:


- Store cookies in an airtight container at room temperature for up to 3 days.

Snickerdoodles

INGREDIENTS

1 cup butter
1 ½ cups white sugar
2 eggs
1 tablespoon vanilla extract
1 tablespoon corn syrup
3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
¼ cup more of white sugar
2 tablespoons cinnamon

DIRECTIONS

1. Preheat your oven to 375 degrees.
2. Whip the butter and first sugar in a stand mixer until light and fluffy and then add the eggs, one at a time. Add the vanilla and corn syrup and continue to beat until the batter is smooth.
3. Meanwhile, in a separate bowl whisk together the flour, baking powder, soda and salt. Add to the butter and egg mixture and continue mixing until well combined.
4. Whisk the remaining white sugar and cinnamon together. Scoop up some of the dough with a spoon then using your hands roll it into a ball. Roll balls in the cinnamon sugar to coat then place on a parchment or silicon lined baking sheet, leaving about 2 inches between cookies. Lightly flatten the balls with your fingertips.
5. Bake for 12 minutes.

Peanut Butter Nutella Cookies

Makes 18 cookies

1/2 cup brown sugar
1/2 cup white sugar
3/4 cup creamy peanut butter
1/2 cup unsalted butter, softened
1 tsp vanilla
1 egg
1 & 1/2 cups flour
1/4 tsp salt 
1/2 tsp baking soda
1/3 cup Nutella 

In the bowl of an electric stand mixer add both sugars, peanut butter, butter, vanilla and egg and mix until smooth and creamy.  In a separate small bowl whisk together the flour, salt and baking soda.  Gradually add the flour mixture to the wet ingredients, mixing until just combined.  Add the Nutella and using a knife swirl it into the batter.  Refrigerate for 15 minutes.

While it's in the refrigerator, preheat your oven to 350 and spray 2 cookie sheets with cooking spray.  When the dough is done chilling, scoop about a 1/4 cup of dough out and roll it into a ball and place on cookie sheet (no more than 12 on a cookie sheet).  With a fork, press down gently on each cookie to flatten it a bit and to give it the cookies a nice pattern on top.  Bake for 12-15 minutes.

Nutcrackle

recipe adapted from Cook’s Illustrated
yield: 36 cookies

INGREDIENTS
3 cups (15 ounces) all-purpose flour
2 teaspoons baking powder
1/2 teaspoon fine sea salt
1-1/4 cups Nutella spread
4 tablespoons unsalted butter, softened
1-1/4 cups (8-3/4 ounces) granulated sugar
1 teaspoon pure vanilla extract
1 teaspoon instant espresso powder
2 large eggs, room temperature
1/3 cup whole milk
1-1/2 cups hazelnuts, toasted and chopped fine
1 cup (4ounces) confectioners’ sugar

DIRECTIONS
1. Combine flour, baking powder, and salt in bowl. With electric mixer on medium-high speed, beat Nutella, butter, and granulated sugar until light and fluffy, about 2 minutes. Add vanilla, espresso, and eggs and mix until incorporated. Reduce speed to low, add flour mixture and milk, and mix until just combined. Fold in 2/3 cup hazelnuts and refrigerate dough until firm, about 1 hour.

2. Adjust oven racks to middle positions and heat oven to 375 degrees. Line three baking sheets with silpat or parchment paper.

3. Place remaining hazelnuts in bowl. Add confectioners’ sugar to another bowl. One at a time, roll dough into 1-inch balls, roll in hazelnuts, then roll in confectioners’ sugar. Place balls 2 inches apart on prepared baking sheets (12 cookies/sheet). Refrigerate first sheet of dough for 10 minute while preparing the second sheet. Bake cookies for approximately 8 minutes, switching and rotating sheets halfway through baking. Cool 5 minutes on sheets, then transfer to wire rack and cool completely. Repeat with remaining cookie dough.

Toblerone Shortbread Cookies

makes 2 dozen cookies

INGREDIENTS
1 cup (2 stick) unsalted butter, softened
1/2 cup granulated sugar
1 1/2 cup all-purpose flour
1/4 cup corn starch
1 small Toblerone chocolate bar, chopped
3 small Toblerone chocolate bar, individual triangles separated

DIRECTIONS
1. Preheat oven to 375F. Line baking sheet with parchment.
2. In a medium bowl, cream butter and sugar until light and fluffy.
3. Add flour and cornstarch gradually while beating continuously. Beat until light. Add chopped Toblerone bits.
4. Drop tablespoons of dough and slightly flatten onto baking sheet. Squish Toblerone triangles in the middle of each cookie.
5. Bake for 12-14 minutes. Cool completely for best texture!

salted chocolate chip cookies

makes about 10 huge cookies

150g (5oz) unsalted butter, softened
250g (9oz) light brown sugar
1 egg
225g (8oz) plain (all-purpose flour)
225-285g (8-10oz) dark chocolate

1. Whizz butter and sugar in a food processor or stand mixer until light and creamy. Add egg and mix until well combined.

2. Add 3/4 teaspoon baking powder and 3/4 teaspoon bicarb soda to the flour and mix to combine.

3. Fold butter mixture into the flour until only just combined.

4. Chop chocolate into chunks and add to the dough. Cover and refrigerate for at least 15 minutes but no longer than 72 hours.

5. When you’re ready to bake, preheat oven to 180C (350F). Line 2 baking sheets or trays with baking paper.

6. Scoop 1/3cup balls of dough and place on the prepared trays. Allowing room for them to spread. Sprinkle liberally with sea salt flakes.

7. Bake for 15 – 20 minutes or until cookies are golden. The bottom tray may need a little longer. Cool on the tray.

One-pan dark chocolate chunk skillet cookie

1 stick (8 tablespoons) unsalted butter
1/2 cup granulated sugar
1/2 cup light brown sugar
1 teaspoon pure vanilla extract
1 egg
1 1/2 cups unbleached all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1 cup chocolate chunks

1. Preheat oven to 350 degrees. Melt butter in an 8 inch cast iron skillet set over medium-low heat. Stir in sugars and vanilla and remove from heat. Let rest until pan is warm, but no longer very hot, about 5 minutes.

2. Crack an egg onto the butter and sugar mixture, and use a fork to whisk it well into the mixture. Place flour, baking soda, and salt on top, and very carefully stir into the mixture until smooth and well-mixed. Stir in chocolate chunks. Place in the oven for 15 minutes, or until starting to turn golden on the top and around the edges, but soft in the center. Serve with vanilla ice cream.

Chocolate Nutella Cookies Recipe

INGREDIENTS
1 1/2 sticks of unsalted butter, room temperature
3/4 cup of brown sugar
3/4 cup of white sugar
1 cup of Nutella
1/2 teaspoon of vanilla
2 eggs
2 cups, plus 2 tablespoons of all-purpose flour
1/4 cup of unsweetened cocoa
1/2 tsp baking soda
1/2 tsp salt
1 cup of chocolate chips
1/2 cup of chopped hazelnuts

METHOD
1 Preheat oven to 350F. Cream butter in an electric mixer for 3 minutes until light and fluffy. Add the sugars and Nutella and mix well, scraping down the sides of the bowl to ensure even mixing.
2 Add the eggs, one at a time, beating for 30 seconds between each. Add the vanilla and mix for 10 seconds.
3 Sift together the flour, cocoa, salt, and baking soda (do not skip this step as sifting eliminates clumps of cocoa). Mix into the butter mixture on low speed until fully incorporated, scraping down the bottom and sides at least once to ensure even mixing. Fold in the chocolate chips and hazelnuts and refrigerate the dough for ten minutes.
4 Spoon tablespoon-sized drops of dough onto parchment paper lined cookie sheets. Bake at 350F for 10-12 minutes. Allow to cool on the sheets for a minute or two before transferring to a wire rack to finish cooling.

Makes 6 dozen.

Rocky Ledge Bars

Recipe from Martha Stewart’s Cookies

1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
2 1/4 cups all-purpose flour
2 1/4 teaspoons baking powder
1 teaspoon coarse salt
1 1/2 cups packed dark-brown sugar
3 large eggs
1 teaspoon pure vanilla extract
1 cup miniature marshmallows
1 cup semisweet chocolate, coarsely chopped
1 cup white chocolate, coarsely chopped
1 cup butterscotch chips
18 soft caramel-candy cubes, coarsely chopped

1. Preheat oven to 350 degrees. Spray a 9-by-13-inch baking pan with cooking spray. Line pan with parchment paper, allowing a 2-inch overhang on the longer sides. Spray the parchment paper with cooking spray. Set the pan aside.

2. Whisk together flour, baking powder, and salt in a medium bowl. In the bowl of an electric mixer fitted with the paddle attachment, mix butter and brown sugar until smooth. Add eggs and vanilla extract, mix until smooth.

3. Slowly add in the flour mixture and mix until just combined. Fold in half of each of the marshmallows, chocolates, butterscotch chips, and caramels.

4. Spread batter into prepared pan. Sprinkle remaining marshmallows, chocolates, butterscotch chips, and caramels on top.

5. Bake until top is golden brown and a cake tester inserted into the center comes out clean, about 35 minutes. Let cool on a wire rack. Lift out of pan, and transfer to a baking sheet. Refrigerate until set, at least 30 minutes.

6. Remove parchment, and cut into about triangles or squares.

Serves 16

Peanut butter blossoms

Ingredients:

48 HERSHEY'S KISSES
1/2 cup butter flavored shortening
3/4 cup Creamy Peanut Butter
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 egg
2 tablespoons milk
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Granulated sugar

Directions:

1. Remove wrappers from chocolate kisses; place in freezer overnight.(I forgot to freeze them and they came out just fine!)

2. Heat oven to 375°F. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.

3. Shape dough into 48 balls (about 1-inch each). Roll in granulated sugar; place on ungreased cookie sheet.

4. Bake 8 to 10 minutes or until lightly browned. Cool 3 to 4 minutes. Press frozen peanut butter filled chocolate piece into center of each cookie; cookie will crack around edges. Remove cookies from sheet to wire rack. Cool completely. 48 cookies.

Crispy, Chewy Chocolate Chip Cookies

As always with cookies, you can scoop, flash freeze and then freeze the cookies until you’re ready to bake them, or to bake a few off at a time. You can bake them straight from the freezer, adding a few minutes to your baking time, of course, or let them thaw out on a tray for a while.

2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips

1. Preheat the oven to 325°F (165°C). Grease cookie sheets or line with parchment paper.

2. Sift together the flour, baking soda and salt; set aside. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended.

3. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended.

4. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time (for giant cookies) or a tablespoon at a time (for smaller cookies) onto the prepared cookie sheets. Cookies should be about 3 inches apart.

5. Bake larger cookies for 15 to 17 minutes, or 10 to 12 minutes for smaller ones (check your cookies before they’re done; depending on your scoop size, your baking time will vary) in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Jacques Torres' Secret Chocolate Chip Cookie Recipe (Full Version)

Makes 26 5-inch cookies or 8 1/2 dozen 1 1/4-inch cookies
1 pound unsalted butter
1 3/4 cups granulated sugar
2 1/4 cups packed light-brown sugar
4 large eggs
3 cups plus 2 tablespoons pastry flour (I used cake flour)
3 cups bread flour
1 tablespoon salt
2 teaspoons baking powder
2 teaspoons baking soda
1 tablespoon pure vanilla extract
2 pounds bittersweet chocolate, coarsely chopped

Preheat oven to 350 degrees. Line baking sheets with parchment paper or nonstick baking mats; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugars.

Add eggs, one at a time, mixing well after each addition.

Reduce speed to low and add both flours, baking powder, baking soda, vanilla, and chocolate; mix until well combined.

Using a 4-ounce scoop for larger cookies or a 1-ounce scoop for smaller cookies, scoop cookie dough onto prepared baking sheets, about 2 inches apart.

Bake until lightly browned, but still soft, about 20 minutes for larger cookies and about 15 minutes for smaller cookies.

Cool slightly on baking sheets before transferring to a wire rack to cool completely.

Fudge Puddle Cookies

Cookie Crust:
1/2 cup butter, softened
1/2 cup creamy peanut butter
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1/2 ts vanilla extract
1-1/4 cup all-purpose flour
3/4 ts baking soda
1/2 ts salt

In a large mixer bowl, combine butter, peanut butter, and both sugars. Beat in egg and vanilla.
In a separate bowl, mix the flour, baking soda, and salt. Gradually add the dry to the wet mixtures.
Chill in the fridge for at least one hour. Remove from fridge and form into 1" balls. Grease a mini-muffin pan and add 1 ball to each muffin cup. Bake in a 325 degree oven for about 15 minutes or until very lightly browned. Remove from oven and make an indentation in the center of each ball, big enough to fill the middles with the fudge filling. Let them cool in the pan for at least 5 minutes and then move to a cooling rack. Once all of the cookies are done baking, it's time to make the fudge filling:

Filling:
1 cup semi-sweet chocolate chips
1 cup butterscotch chips (I used milk chocolate chips)
1-14 oz. can sweetened condensed milk
1 ts vanilla
chopped nuts or sprinkles(optional)

In a microwave safe bowl or saucepan, combine all of the ingredients except the nuts/sprinkles. Microwave for 1 minute, stir well. If there are still unmelted chips, continue to melt in microwave for 15 second increments until all smooth:
Immediately start filling the cookie cups with the filling. It will start to harden just a bit as you do it, so make sure to give it a good stir once in awhile. Sprinkle with the nuts or just leave plain. Let set for an hour or so.

Banana-Walnut Chocolate-Chunk Cookies

(From: Martha Stewart’s Cookies, pg 170)

1 cup all-purpose flour
½ cup whole wheat flour
1 teaspoon coarse salt
½ teaspoon baking soda
¾ cup (1 ½ sticks) unsalted, room temperature butter
½ cup granulated sugar
½ cup packed light brown sugar
1 large egg
1 ½ teaspoon pure vanilla extract
½ cup mashed ripe banana (about 1 large banana)
1 cup old-fashioned rolled oats
8 ounces semi-sweet chocolate, coarsely chopped into ¼-inch chucks
(I just used semi-sweet chocolate chips)
½ cup coarsely chopped walnuts (about 2 ounces), toasted
(I did NOT toast the walnuts)

Preheat oven to 375 degrees. Whisk together both flours, salt, and baking soda in a bowl.

Put butter and both sugars into the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy. Reduce speed to low. Add egg and vanilla; mix until combined. Mix in banana. Add flour mixture; mix until just combined. Stir in oats and chocolate chunks, and walnuts.

Using a 1 ½ inch ice cream scoop, drop dough onto baking sheets lined with parachment paper, spacing about 2 inches apart. Bake cookies, rotating sheets halfway through, until golden brown and just set, 12 to 13 minutes. Let cool on sheets on wire racks for 5 minutes. Transfer cookies to wire rack; let cool completely.

Cookies can be stored in an airtight container at room temperature for up to 2 days.

Chocolate Chunk Peanut Butter Cookies

1 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp kosher salt
1 cup smooth peanut butter
1/2 cup light brown sugar (packed)
1/2 cup granulated sugar
8 tbl unsalted butter (room temperature)
2 tbl honey
1 large egg
2 tsp pure vanilla extract
6 oz semisweet chocolate (chopped into large chunks)

Preheat the oven to 350F. Line 2 large heavy duty baking sheets with aluminum foil.
Mix the flour, baking soda and the salt in a medium bowl. Using an electric mixer, beat the peanut butter, brown sugar, granulated sugar, butter, honey egg and vanilla in a large bowl until well blended. Stir the dry ingredients into the peanut butter mixture in two additions. Stir in the shoppes chocolate.

Scoop about 2 tablespoonsful of dough for each cookie onto the prepared baking sheets, spacing them about 2 inches apart. Bake for about 12 minutes (shorter time if using a convection oven), or until the cookies puff and begin to brown on top but are still soft to the touch.
Let the cookies cool on the baking sheets for 5 minutes. Then use a spatula to transfer the cookies to a wire rack.

Chocolate Chip Oreo Cookies

1 stick softened butter
1/4 cup + 2 tbsp sugar
1/4 cup + 2 tbsp brown sugar
1 egg
½ tsp vanilla
1 ¼ cups flour
½ tsp baking soda
½ tsp salt
8 oreo cookies, broken into pieces
1 cup chocolate chips

Preheat oven to 350 degrees. Line a baking sheet with a silpat sheet or parchment paper.

In a large bowl, beat together butter, white sugar, brown sugar, egg and vanilla until creamy.

In a separate bowl combine flour, baking soda and salt in large bowl and mix thoroughly. Slowly add dry ingredients to wet and mix. Add chocolate chips and crushed oreos, stir until just combined.

Drop by the spoonful onto the cookie sheet. Bake for 7–9 minutes, or until golden brown, but still soft. Let cool on baking sheet 3 minutes before transferring to cookie rack. Enjoy.

Chocolate Brownie Cookies


Ingredients:
35g all-purpose flour
1/4 tsp baking powder
1/8 tsp salt
2 large eggs
135g sugar
1/2 tbsp brewed espresso
1 tsp vanilla extract
30g unsalted butter
140g 75% cacao chocolate, chopped

Directions:
Preheat the oven to 375ºF/190ºC. Line 2 baking sheets with parchment paper. In a small bowl, whisk together the flour, baking powder, and salt. Set aside.

In the bowl of an electric mixer, briefly whip the eggs to break them up. Add the sugar, espresso, and vanilla and beat on high for 15 minutes, until thick.

While the eggs are whipping, melt the butter and chocolate and stir them until smooth. Gently fold the chocolate mixture into the egg mixture until partially combined (there should still be some streaks). Add the flour mixture to the batter and carefully fold it in. If the batter is very runny, let it rest until it thickens slightly, about 5 minutes. Drop the batter by heaping teaspoonfuls onto the prepared baking sheets and bake until puffed and cracked, 8 to 9 minutes. Cool on a wire rack before removing from the sheets.
