Instant Pot Beef Stew

Ingredients

8 Quart Instant Pot
  • 1 large onion, chopped
  • 3 large carrots, chopped
  • 4 small celery stalks, chopped
  • 4 large garlic cloves, grated & divided
  • 3 lbs potatoes, cubed
  • 2 lbs beef, cubed*
  • 6 oz can tomato paste
  • 2 bouillon cubes**
  • 3 cups water**
  • 1 1/2 tsp oregano
  • 1 1/2 tsp thyme
  • 1 1/4 tsp salt
  • Ground black pepper, to taste
  • 4 bay leaves
  • 7 peppercorns
  • 2 cups frozen peas
  • 1 cup dill, finely chopped

Instructions

  1. In Instant Pot, add onion, carrot, celery, 2 garlic cloves, potatoes and beef as you are cutting them. Then add tomato paste, bouillon + water or stock, oregano, thyme, salt, pepper, bay leaves and peppercorns. Stir.
  2. Close the lid, set pressure vent to Sealing and press Stew for 30 minutes. Display will say ON, Instant Pot will take about 20 minutes to come to pressure, you will see a bit of steam coming out from a valve, then float valve will rise and countdown from 30 minutes will begin.
  3. When display says OFF, stew is ready. Now your Instant Pot needs to bring pressure down before you can open it, which will be indicated by a dropped down float valve. You can let it do it on its own which will take about 15-20 minutes – Natural Release. OR you can do Quick Release by turning pressure valve to Venting position, which takes 2-3 minutes. I recommend doing so outside. Trust me, it’s a messy process and I usually do not have time to wait.
  4. Open the lid, add peas, remaining 2 cloves of garlic and dill. Stir and serve hot.
Store: Refrigerate in an airtight container or inner Instant Pot pot with a fitting glass lid for up to 5 days.
Freeze: Fully cook, cool completely and freeze in an airtight container for up to 3 months. Thaw on a stovetop covered on low.

Notes

*You can use frozen cubed meat. Just add 10 minutes to cooking time.
**Replace with any stock.

Beefy Macaroni Casserole

INGREDIENTS

  • 4 tablespoons unsalted butter (1/2 stick)
  • 2 medium red bell peppers, cored, seeded, and cut into medium dice
  • 1 medium yellow onion, medium dice
  • 2 medium garlic cloves, finely chopped
  • 1 tablespoon kosher salt, plus more as needed
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 3/4 teaspoon freshly ground black pepper, plus more as needed
  • 2 tablespoons tomato paste
  • 1 pound lean ground beef
  • 1 pound elbow macaroni
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 (15-ounce) can crushed tomatoes (with juices)
  • 1 cup low-sodium chicken broth or stock
  • 3 cups shredded sharp cheddar cheese (about 8 ounces)

INSTRUCTIONS

  1. Bring a large pot of heavily salted water to a boil over high heat. Heat the oven to 400°F and arrange a rack in the middle.
  2. Meanwhile, melt the butter over medium heat in a large saucepan or Dutch oven. Add the bell peppers, onion, garlic, measured salt, oregano, paprika, and measured pepper and cook, stirring occasionally, until the vegetables are softened but not browned, about 7 to 10 minutes.
  3. Add the tomato paste, stir to combine, and cook until the raw flavor has cooked out, about 1 minute. Add the ground beef, season with salt and pepper, and cook, breaking the meat into smaller pieces with a wooden spoon, until it’s just cooked through and no longer pink, about 5 minutes. Meanwhile, add the pasta to the boiling pot of water and cook until still chewy and underdone, usually 1 or 2 minutes less than the package directions suggest (the pasta will finish cooking in the oven). Drain and rinse with cold water until no longer steaming; set aside.
  4. Add the flour to the beef mixture and cook, stirring occasionally, until the raw taste has cooked out of the flour, about 2 minutes. Add the milk, tomatoes and their juices, and broth or stock, stir to combine, and bring to a simmer.
  5. Add the cooked pasta and 1 1/2 cups of the cheese and stir to combine. Continue cooking, stirring occasionally, until the pasta is heated through and steaming, about 1 minute. Taste and season with salt and pepper as needed.
  6. Transfer to a 5-quart baking dish, sprinkle with the remaining 1 1/2 cups of cheese, and bake until bubbling and lightly browned on top, about 25 to 30 minutes. Transfer to a wire rack and let cool for 5 minutes before serving.

Szechuan Beef Recipe

Serves 2 | Prep Time: 20 Minutes | Cook Time: 5 Minutes
Ingredients:
2 tablespoons oil
8 oz beef, cut into thin strips
2 cloves garlic, minced
1/4 small green bell pepper, cut into long strips
1/4 small red bell pepper, cut into long trips
1-2 baby carrots, cut into matchstick strips
1/2 teaspoon chili oil (bottled chili oil), optional
2 stalks scallions, cut into 2-inch strips
Marinade:
1 teaspoon cornstarch
1/2 teaspoon Shaoxing wine (Chinese rice wine)
1 teaspoon dark soy sauce
Sauce:
1/2 heaping tablespoon oyster sauce
1/2 tablespoon chili garlic sauce
1 1/2 teaspoons soy sauce
2 teaspoons sugar
2 tablespoons water
1/2 teaspoon chili oil
1/2 teaspoon sesame oil
Method:
Marinate the beef with all the ingredients in the Marinade, for 15 minutes.
Combine all the ingredients in the Sauce, stir and mix well, set aside.
Heat up a wok and add 1 tablespoon of oil. When the oil is fully heated, add the beef and do a few quick stirs, until the surface turns opaque and slightly charred. Transfer out and set aside.
Clean the wok and add the remaining 1 tablespoon of oil. When the oil is fully heated, add the garlic and stir-fry until aromatic. Add all the peppers and carrots and stir a few times before adding the beef back into the wok. Add the Sauce and stir to combine well. Stir in the scallion and chili oil, dish out and serve immediately with steamed rice.

Sichuan Orange Beef Recipe

Ingredients:
8 oz. beef sirloin – cut into thin strips
2 tbsp peanut oil
1 tbsp Season with Spice’s Sichuan Peppercorns – crushed
1 tsp Shaoxing rice wine or dry sherry (optional)
1 small red bell pepper – sliced thinly
2-3 scallions – cut into 2-inch pieces
2 tsp toasted sesame oil
For the marinade:
Juice from one orange (about 1/3 cup*)
Zest from one orange (about 1 tablespoon)
2 tablespoons reduced sodium soy sauce
1 tbsp honey
1 tbsp fresh ginger – minced
2 teaspoons cornstarch
Method:
1. In a bowl, whisk together all the marinade ingredients. Add in the beef and coat well. Leave to marinate for 10-15 minutes in the fridge.
2. Heat a wok on high fire. Add peanut oil, and swirl to coat. Toss in the crushed Sichuan peppercorns and do a few quick stirs until fragrant. Add in the beef, but keep the leftover marinade to the side. Pour in Shaoxing wine if using. Let sear for 1-2 minutes until slightly charred, then do a few quick stirs. Add in bell pepper and the white parts of the scallions, and give it a few more stirs.
3. Keep the heat on high, add in the leftover marinade, and toss to coat all the ingredients. When the sauce starts to simmer, stir in the scallion greens and toasted sesame oil. Dish out and serve immediately with rice.

Garlic prime rib

INGREDIENTS:
1 (10 pound) prime rib roast
10 cloves garlic, minced
2 tablespoons olive oil
2 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons dried thyme
DIRECTIONS:
1.Place the roast in a roasting pan with the fatty side up. In a small bowl, mix together the garlic, olive oil, salt, pepper and thyme. Spread the mixture over the fatty layer of the roast, and let the roast sit out until it is at room temperature, no longer than 1 hour.
2.Preheat the oven to 500 degrees F (260 degrees C).
3.Bake the roast for 20 minutes in the preheated oven, then reduce the temperature to 325 degrees F (165 degrees C), and continue roasting for an additional 60 to 75 minutes. The internal temperature of the roast should be at 135 degrees F (57 degrees C) for medium rare.
4.Allow the roast to rest for 10 or 15 minutes before carving so the meat can retain its juices.

Beef and Butternut Squash Stew

Ingredients

3 tablespoon olive oil
1 onion, peeled and chopped
2 cloves garlic, chopped
1 tablespoon minced fresh rosemary
1 tablespoon chopped fresh thyme
2 pounds stew beef, cut into 2-inch cubes
1/2 teaspoon salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
2 tablespoons all-purpose flour
1 cup Marsala wine
1 pound butternut squash, trimmed and cut into 2-inch cubes
1/4 cup chopped sun-dried tomatoes
3 to 4 cups beef broth
2 tablespoons fresh chopped flat-leaf parsley
Crusty bread, for serving

Directions

In a large soup pot heat 3 tablespoons of olive oil over medium heat. Add the onions, garlic, rosemary, and thyme and saute until the onions are tender, about 2 minutes. Toss the beef cubes in salt and pepper and flour. Turn up the heat to med-high and add the beef to the pot. Cook until the beef is browned and golden around the edges, about 5 minutes. Add the Marsala wine. Using a wooden spoon, gently stir up all the brown bits off the bottom of the pan. Add the butternut squash and sun-dried tomatoes and stir to combine. Add enough beef broth to just cover the beef and squash. Bring the stew to a boil over high heat, then reduce the heat to low and simmer, covered, for 1 hour. Season the stew with additional salt and pepper to taste. Sprinkle with the chopped parsley. Serve with crusty bread alongside.

Ingredients

2 1/2 pounds good quality chuck beef, cut into 1 1/2-inch cubes
1 (750-ml bottle) good red wine
3 whole garlic cloves, smashed
3 bay leaves
2 cups all-purpose flour
Kosher salt
Freshly ground black pepper
Good olive oil
2 yellow onions, cut into 1-inch cubes
1 pound carrots, peeled and cut diagonally in 1 1/2-inch chunks
1/2 pound white mushrooms, stems discarded and cut in 1/2
1 pound small potatoes, halved or quartered
1 tablespoon minced garlic (3 cloves)
2 cups or 1 (14 1/2-ounce can) chicken stock or broth
1 large (or 2 small) branch fresh rosemary
1/2 cup chopped sun-dried tomatoes
2 tablespoons Worcestershire sauce
1 (10-ounce) package frozen peas

Directions

Place the beef in a bowl with red wine, garlic, and bay leaves. Place in the refrigerator and marinate overnight.

The next day, preheat the oven to 300 degrees F.

Combine the flour, 1 tablespoon salt, and 1 tablespoon pepper. Lift the beef out of the marinade with a slotted spoon and discard the bay leaves and garlic, saving the marinade. In batches, dredge the cubes of beef in the flour mixture and then shake off the excess. Heat 2 tablespoons of olive oil in a large pot and brown half the beef over medium heat for 5 to 7 minutes, turning to brown evenly. Place the beef in a large oven-proof Dutch oven and continue to brown the remaining beef, adding oil as necessary. (If the beef is very lean, you'll need more oil.) Place all the beef in the Dutch oven.

Heat another 2 tablespoons of oil to the large pot and add the onions, carrots, mushrooms, and potatoes. Cook for 10 minutes over medium heat, stirring occasionally. Add the garlic and cook for 2 more minutes. Place all the vegetables in the Dutch oven over the beef. Add 2 1/2 cups of the reserved marinade to the empty pot and cook over high heat to deglaze the bottom of the pan, scraping up all the brown bits with a wooden spoon. Add the chicken stock, rosemary, sun-dried tomatoes, Worcestershire sauce, 1 tablespoon salt, and 2 teaspoons pepper. Pour the sauce over the meat and vegetables in the Dutch oven and bring to a simmer over medium heat on top of the stove. Cover the pot and place it in the oven to bake it for about 2 hours, until the meat and vegetables are all tender, stirring once during cooking. If the stew is boiling rather than simmering, lower the heat to 250 or 275 degrees F.

Before serving, stir in the frozen peas, season to taste, and serve hot.

Roast Beef

Classic roast beef recipe using rump roast, round roast, or sirloin tip. This slow roasting method at low heat is good for tougher cuts of beef; the lower heat prevents any gristle from getting too tough.
  • Cook time: 3 hours

INGREDIENTS

  • 3 to 3 1/2 lbs (1.3 to 1.6 kg) of Boneless Rump Roast (pick an end cut with a layer of fat if you can)
  • Olive oil
  • 8 slivers of garlic
  • Salt and pepper
You will need a meat thermometer
For the gravy:
  • Red wine, water, and or beef stock
  • corn starch

METHOD

1 Start with the roast at room temperature (remove from refrigerator 1 hour before cooking - keep it wrapped). Preheat the oven to 375°F (190°C).
2 With a sharp knife make 8 small incisions around the roast. Place a sliver of garlic into each incision. Take a tablespoon or so of olive oil and spread all around the roast. Sprinkle around the roast with salt and pepper. Place the roast directly on an oven rack, fatty side up, with a drip pan on a rack beneath the roasting rack. This arrangement creates convection in the oven so that you do not need to turn the roast. The roast is placed fat side up so that as the fat melts it will bathe the entire roast in its juices.

3 Brown the roast at 375°F (190°C) for half an hour. Lower the heat to 225°F (107°C). The roast should take somewhere from 1 1/2 to 2 1/2 hours additionally to cook. The shape of the roast will affect the cooking time, by the way. So if your roast is on the long and narrow side, versus a more round shape, it may take less time to cook. So keep an eye on it. When the roast just starts to drip its juices and it is brown on the outside, check the temperature with a meat thermometer. Pull the roast from the oven when the inside temperature of the roast is 135° to 140°F (57°C to 60°C). Let the roast rest for at least 15 minutes, tented in aluminum foil to keep warm, before carving to serve.
To make the gravy:
Remove the dripping pan from the oven and place on the stove top at medium heat. Note that if you are pulling the roast out early, for rare or a medium rare level of doneness, you may not have a lot of drippings. Hopefully you will have some. If not, you may want to leave the roast in a little longer at even lower heat, 175°F, to ease some more drippings out of it. Add some water, red wine, or beef stock to the drippings to deglaze (loosen the drippings from the pan). Dissolve a tablespoon of cornstarch in a little water and add to the drip pan. Stir quickly while the gravy thickens to avoid lumping. You can add a little butter if there is not a lot of fat in the drippings. Add salt and pepper to taste. Ingredients

  • 1.5 kg quality topside of beef
  • 2 medium onions
  • 2 carrots
  • 2 sticks celery
  • 1 bulb garlic
  • 1 small bunch fresh thyme, rosemary, bay or sage, or a mixture
  • olive oil
  • sea salt
  • freshly ground black pepper
 

Method

To prepare your beef:
Take your beef out of the fridge 30 minutes before it goes into the oven. Preheat your oven to 240°C/475°F/ gas 9. There's no need to peel the vegetables – just give them a wash and roughly chop them. Break the garlic bulb into cloves, leaving them unpeeled.

Pile all the veg, garlic and herbs into the middle of a large roasting tray and drizzle with olive oil. Drizzle the beef with olive oil and season well with salt and pepper, rubbing it all over the meat. Place the beef on top of the vegetables.

To cook your beef:
Place the roasting tray in the preheated oven. Turn the heat down immediately to 200°C/400°F/gas 6 and cook for 1 hour for medium beef. If you prefer it medium-rare, take it out 5 to 10 minutes earlier. For well done, leave it in for another 10 to 15 minutes.

If you're doing roast potatoes and veggies, this is the time to crack on with them – get them into the oven for the last 45 minutes of cooking. Baste the beef halfway through cooking and if the veg look dry, add a splash of water to the tray to stop them burning.

When the beef is cooked to your liking, take the tray out of the oven and transfer the beef to a board to rest for 15 minutes or so. Cover it with a layer of tinfoil and a tea towel and put aside while you make your gravy, horseradish sauce and Yorkshire puddings.

Slow Cooker Pot Roast


Yields about 4 servings

Ingredients:
2 1/2 lbs chuck roast
1 1/4 cups beef broth
1 Tbsp + 1 tsp Worcestershire sauce
1 3/4 tsp dried Italian seasoning
2 tsp onion powder
1 tsp garlic powder
Salt and freshly ground black pepper, to taste
4 medium Russet potatoes, scrubbed and rinsed then diced into chunks about 3/4" - 1"
12 oz. baby carrots

Directions:
Place chuck roast in a slow cooker. Pour beef broth over roast, and drizzle with Worcestershire sauce. Sprinkle with Italian seasoning, onion powder, garlic powder then season with salt and pepper. Cover and cook on LOW heat 7 hours. 
Remove roast to a large plate or cutting board, reserving broth in slow cooker (it should be fall apart tender so it will likely break apart when you lift it out). Add diced potatoes and baby carrots to slow cooker in broth (the broth should cover the veggies), return roast to slow cooker placing on top of vegetables. Cover and cook on HIGH for 1 - 1 1/2 hours, or until vegetables are tender when pierced with a fork. Plate and ladle with broth in slow cooker.

Tex Mex Casserole

A one pan pasta skillet recipe that will leave your family for wanting more!
 
Ingredients
  • 1 tbs. vegetable oil
  • 1 onion, chopped fine
  • 1 green pepper, seeded and cut in 1/2 inch pieces
  • 3 minced garlic cloves
  • 2 tbsp. chile powder
  • 1/8 tsp. cayenne pepper
  • 1 lb. 90 percent lean ground beef
  • 2 cups water
  • 1 (15 oz.) can tomato sauce
  • 8 oz. whole wheat elbow macaroni (2 cups)
  • 1 cup fresh or frozen corn
  • 1 (4.5 oz.) chopped green chiles
  • 8 oz. (2 cups) shredded Mexican cheese (I use the 2 percent version)
  • Salt and Pepper
  • 2 tbsp. chopped fresh cilantro
Instructions
  1. Place oven rack in the middle of the oven and pre-heat to 475 degrees.
  2. Heat oil in a 12 inch oven proof skillet pan (non-stick is best) over medium heat.
  3. Add onion and pepper and cook until softened – 5 to 7 minutes.
  4. Stir in garlic, chili powder and cayenne and cook until fragrant – about 30 seconds.
  5. Stir in beef, breaking up with wooden spoon and cook until no longer pink – about 2 minutes.
  6. Stir in water, tomato sauce and pasta.
  7. Cover, increase heat to medium high and cook at a vigorous simmer – stirring often until pasta is al dente – about 9 – 12 minutes.
  8. Off heat, stir in corn, chiles and 1 cup of cheese.
  9. Season with salt and pepper.
  10. Sprinkle remaining cup of cheese evenly over top.
  11. Place skillet in oven and bake until cheese has melted – 10-15 minutes.
  12. Sprinkle with chopped cilantro and serve.

Beef and Barley Stew with Mushrooms Recipe

If you can't find celery root, you can substitute turnips, rutabagas or potatoes. Just be sure to adjust your cooking times—potatoes cook faster than celery root. Save time in the prep work by prepping the onions and mushrooms while the beef is browning.

Ingredients

2 Tbsp unsalted butter
2-3 pounds beef chuck, cut into chunks
Salt
3 cups chopped onions
1 pound button or cremini mushrooms, quartered if small or 1/4-inch sliced
1 quart beef or chicken broth
3 cups water
2 teaspoons dried marjoram
1 cup pearl barley
1 cup roughly chopped carrot
3 cups celery root, peeled and chopped into 3/4-inch to 1-inch chunks
Black pepper
About 1/2 cup sour cream (around 1 Tbsp sour cream per serving)
Dill for garnish

Method

1 In a Dutch oven or other large, lidded pot, melt the butter over medium-high heat. Add enough pieces of the beef to sear in the pot without crowding. You will need to brown the meat in several batches. Salt the beef as it cooks, and set aside browned pieces in a bowl.

2 When all the beef has browned, add the onions. As the onions release some of their water, use a wooden spoon to scrape any browned bits off the bottom of the pot. Sprinkle a little salt over the onions as they cook. Lower the heat to medium and cook the onions until they begin to brown, 5-6 minutes.

3 When the onions have lightly browned, mix in the mushrooms and increase the heat to high. Cook the mushrooms until they release their water, about 2-3 minutes.

3 Add the beef back to the pot and sprinkle with marjoram. Add 1 cup of the stock and use the wooden spoon to scrape any browned bits off the bottom of the pot. Add the rest of the stock and water and bring to a simmer. Cover the pot, lower the heat to low and simmer very gently for 1 hour.

4 Add the barley, celery root and carrots, stir well and recover the pot. Simmer gently until the barley and celery root are tender, between 40 minutes and an hour.

Ladle servings into bowls, then top with a dollop of sour cream and a few sprigs of dill. Grind a little black pepper over right before you serve. To eat, stir in the sour cream.

Yield: Serves 8-10.

Beef & Black Bean Chili with Chipotle & Avocado

Serves four

3 15-oz. cans black beans, rinsed and drained
1 14-1/2-oz. can diced tomatoes
1 medium chipotle plus 2 Tbs. adobo sauce (from a can of chipotles in adobo sauce)
2 Tbs. extra-virgin olive oil
1 lb. 85% lean ground beef
Kosher salt
1 large red onion, finely diced
1-1/2 Tbs. chili powder
2 tsp. ground cumin
1 lime, juiced
1/2 cup chopped fresh cilantro
Freshly ground black pepper
1 ripe avocado, cut in a medium dice
Put one-third of the beans into the bowl of a food processor, along with the tomatoes and their juices, chipotle, and adobo sauce. Process until smooth and set aside.

Heat the oil in a 5- to 6-quart Dutch oven or similar heavy-duty pot over medium-high heat until it’s shimmering hot, about 2 min. Add the beef, season with 1/2 tsp. salt, and cook, using a wooden spoon to break up the meat, until it loses its raw color, about 3 minutes. Transfer the beef to a large plate using a slotted spoon. Add half of the onion and 1/4 tsp. salt, and cook, stirring, until it begins to brown and soften, about 3 min. Reduce the heat to medium. Add the chili powder and cumin and cook for 20 seconds. Add the remaining black beans, the puréed bean mixture, and the beef to the pot and simmer for 10 min., stirring frequently. Add half of the lime juice, half of the cilantro, and salt and pepper to taste. If the chili is thicker than you like, it may be thinned with water.

Meanwhile, in a small bowl, mix the remaining lime juice and onion with the avocado. Season generously with salt and pepper. Serve the chili topped with the avocado mixture and remaining cilantro.

serving suggestions

Coarsely crumble about 3 handfuls of tortilla chips in a zip-top bag, and use them as an additional chili topping.

Vegetable Beef Noodle Soup Recipe

serves 4 as main dish

Ingredients:

3 1/2 cups low-sodium, low-fat beef stock
3 1/2 cups water
1/2 to 3/4 pound good quality beef steak (sirloin strip is good)
1 14 to 16 ounce can diced tomatoes
1 cup medium egg noodles
2 medium fresh carrots, peeled and thinly sliced
2 ribs celery, strings removed, halved and diced
1 large yellow onion, peeled and diced
1/2 cup frozen peas
1 large clove garlic, peeled
1 bay leaf
1/2 teaspoon dried thyme
Several grates black peppercorn
Kosher salt to taste


How to make the Vegetable Beef Noodle soup:

Begin the soup by searing the steak in a very heavy, hot skillet (cast iron is ideal) on both sides. Cook to no more than medium rare - it will finish cooking later- and set the steak aside to rest for at least ten minutes before slicing for the soup. When slicing for the soup, cut thinly across the grain into bite sized strips.
De-glaze the pan used to cook the steak by adding 1/2 cup of the water to the pan while still hot, being careful of the steam, and scrape up the bits left from searing the steak. Add this to a large soup kettle, along with the rest of the water and the beef stock.

Add the diced onion, celery, sliced carrots, garlic, bay leaf and thyme to the soup pot. Simmer this for 20 minutes, until the celery and carrots are very tender.
Add the tomatoes, bring back to a simmer and continue to cook for another ten minutes.

Stir in the cup of medium egg noodles, cook for seven minutes then add the sliced steak and the frozen peas. Taste for salt and pepper and season accordingly.
Continue cooking at a bare simmer for three minutes more or until the noodles and peas are tender.

Soup is done - enjoy!

Stuffed Bell Peppers

Ingredients
10 Medium Bell Peppers
220 g Monterey Jack Cheese, grated
1 Tbsp Olive Oil
Sea Salt to taste
Freshly Ground Black Pepper

Beef Mixtures
400 g Ground Beef
8 Sun-dried Tomatoes in oil, chopped
4 cloves Garlic, finely chopped
1 Large Yellow Onion, finely chopped
2 tsp Dried Parsley
1 Cup Fresh Basil Leaves, torn
1 Can (28 Fl oz) Whole Tomato, crushed and drained
2 Tbsp Tomato Paste
1 Tbsp Chili Flakes
3 Tbsp Olive Oil
Sea salt to taste
Freshly Ground Black Pepper

Method
Prepare the beef mixtures:
In a large saucepan, heat the olive oil over a medium heat. Add the onion, garlic and sauté until translucent, for about 10 minutes.

Add the ground beef and cook until the meat is no longer pink in color. Then add the sun-dried tomato, chili flakes, parsley, and give it a quick stir. Mix in the can tomatoes, tomato paste, and basil leaves and cook for another 10 minutes. Season the beef mixtures with salt and pepper. Remove from the heat and set aside.

Preheat oven to 205˚C/400˚F.

Clean the peppers, sliced the top off (reserved), discard the cores and dry with paper towels.Brush the peppers with olive oil on the outsides. Fill the beef mixture in to the peppers and top with the cheeses. Lightly oil a baking tray, place peppers and the reserved top besides them. Roast for about 25 minutes or until the cheese have melted and light brown in color. Remove from the oven. Let it cool slightly before serving.

Asparagus, beef and mushroom stirfry

Ingredients:
1 pound beef (thinly sliced)
3 tablespoons soy sauce
3 tablespoons shao xing Chinese cooking wine (or cooking sherry)
2 tablespoons garlic (chopped)
2 tablespoons ginger (chopped)
1 tablespoon cornstarch
1 tablespoon oil
1 tablespoon oil
2 tablespoons garlic (chopped)
2 tablespoons ginger (chopped)
2 tablespoons fermented black beans (soaked in water and chopped)
1 pound asparagus (sliced into bite sized pieces)
1 pound shiitake mushrooms (stems removed and sliced)
1 tablespoon chili sauce (optional)
1/2 cup chicken stock
1 teaspoon sesame oil* soy sauce to taste

Directions:
1. Marinate the beef in the soy sauce, rice wine, garlic, ginger, and cornstarch while you chop everything.
2. Heat the oil in a pan.
3. Add the beef and its marinade and saute the until almost cooked and set aside.
4. Heat the oil in the pan.
5. Add the garlic, ginger and fermented black beans and saute until fragrant, about 1 minute.
6. Add the mushrooms and saute until soft, about 3-4 minutes.
7. Add the asparagus and saute for 1-2 minutes.
8. Add the chili sauce, beef and chicken stock.
9. Cover and simmer for a few minutes.
10. Add the sesame oil and season with soy sauce to taste.

Flank Steak Stir-Fry with Asparagus and Red Pepper Recipe

Ingredients
3 Tbsp vegetable oil
1/2 lb asparagus, trimmed, cut on the diagonal into 1 1/2 inch lengths (about 1 1/2 cups)
1 lb of flank steak, sliced in half lengthwise (along the grain) and then cut into thin strips, 2 inches long and 1/4 inch wide (put the steak in the freezer for 15 minutes before slicing to make it easier to slice)
1 red bell pepper, seeded, de-ribbed, and cut into thin strips 2 inches long and 1/4 inch wide
2 teaspoons of cornstarch dissolved into 3 Tablespoons of water

All Purpose Stir Fry Sauce
3 Tbsp soy sauce (use gluten-free soy sauce for gluten-free version)
1 tsp finely chopped, peeled, fresh ginger
1 small clove garlic, minced
1 green onion, including green tops, chopped
1/2 tsp chili oil

Method
1 While you are chopping the ingredients in preparation, bring a small saucepan of water to boil. Parboil the asparagus pieces for 2 minutes, drain, rinse in cold water, drain, and set aside. If you are planning to serve this dish with rice, in a separate pan, prepare 2 cups of white rice, following the instructions on the rice package.
2 Prepare the All Purpose Stir Fry Sauce by combining the ingredients in a small dish, and set aside.
3 Stir-fry the asparagus in a wok (or a thick-bottomed pan with at least 2" sides that can take high heat) in 1 Tbsp of oil, on high heat, for about 2 minutes until lightly browned. Remove asparagus from pan and set aside.
4 Add another 1 Tbsp of oil to the pan and stir fry the beef strips, in 2 batches, for 2-3 minutes until browned but still pink inside. Return the first batch of beef to the pan and add the bell pepper. Stir and toss over high heat until just beginning to wilt, 1-2 minutes.
5 Quickly stir the cornstarch liquid and add it to the pan along with the stir fry sauce. Cook until sauce thickens, 1-2 minutes. Return the asparagus to the pan, toss to evenly coat and serve with steamed white rice (unless you are going low-carb, in which case, leave out the rice).

Serves 4.

Yaki Udon with Beef

Ingredients (serves 2):
250g beef, thinly sliced
1 tbsp light soy sauce
1 tsp mirin 1 tsp sake
1/2 tsp corn flour
Two portions of udon noodles
2 stalks of spring onions, sliced on the diagonal
2 bunches of bak choy or other greens, cut into sections
Oil for cooking
4 tbsp light soy sauce
2 tbsp sake
1 tsp thick dark soy sauce (or Japanese Worchestershire sauce)
2 tsp sugar
Pinch of salt
1/4 tsp sesame oil
1 tsp sesame seeds, toasted

Method:
1. Marinate the beef in light soy sauce, mirin, sake and corn flour for an hour or overnight.
2. Cook the udon noodles according to pack instructions. Drain and set aside.
3. While the noodles are cooking, heat a wok or large pan until hot and toast the sesame seeds in the dry pan. Stir to make sure they don't burn. Remove and set aside when lightly toasted.
3. Heat the wok again till it almost starts to smoke. Add some oil and when the oil is hot, add the beef. Stir fry briskly until the beef is half cooked, about 2 minutes. Set aside.
4. Heat more oil in the wok and add spring onions and boy choy. When the vegetables have just wilted, add the udon and the rest of the seasoning and mix well. Put the beef back into the wok to heat through and finish cooking. Dish out and sprinkle with sesame seeds to garnish.

French Dip Sandwiches

1 2.5-3 lb. beef roast (you can use a frozen roast if you want)
2 Tbsp. olive oilsalt and pepper
2 1-ounce packages dry onion soup mix
2 c. water
2 cans beef broth
6-8 large buns (or more...6 would be VERY generous servings!)
Swiss, provolone, or mozzarella cheese, shredded or sliced.

Heat oil in a large pot over medium-high heat and rub roast with salt and pepper. When very hot, carefully place roast in pan and sear on all sides. You're not cooking the meat, you're just browning it quickly on all sides to add flavor and seal in the juices. Oh, and it smells so good--just like Grandma's house on a Sunday afternoon. Place in crockpot and sprinkle with onions soup mix. Pour water and beef broth over roast.

Cook 8-10 hours on low or cook 4-5 hours on high and another 3-4 hours on low. It's hard to screw this part up; basically, the longer it cooks, the more tender it will be. But you know it's done when you pop a fork in it and the meat just falls apart.

When meat is ready, shred with a fork and place meat in crusty rolls. Top with cheese and broil open-faced in the oven or toaster oven for a few minutes, until bread is golden and cheese is melty. And don't even think about walking away--things can go from lightly-toasted to on fire within a matter of seconds when you're using your broiler. Ladle juices into small cups for dipping and enjoy

FREEZER DIRECTIONS:
Prepare roast through the searing step; after meat has cooled, place in a plastic freezer-safe container (think Gladware), cover with onion soup mix and boullion, and freeze. When ready to cook, pop it straight into the crockpot (frozen), add 2 cups of water, and set to high until warm or, even better, simmering. Turn to low; cook for a total of 8-10 hours.

Beef with Flat Rice Noodle

Ingredients:

For noodles:
1 1/2 lbs hor fun(frying type) or a pkt of fresh hor fun/flat rice noodle
4 tbsp oil
2 tsp soya sauce
2 tsp dark soya sauce

1/2 lb Beef fillet/sirlion - slice thinly across the grain
1/2 cup drained canned straw mushroom - cut into slices
1/4 cup sliced carrot
1/2 lb Choy sum - wash and cut into 2 inch lengths - put on a plate and microwave for 2 mins.
1/4 cup of sliced young gingers
Oil for frying beef and noodle

Marinate
1/2 tsp bicarbonate of soda
1/2 tsp sugar
1 tsp light soya sauce
1 tsp dark soya sauce
1/2 egg white
1 tbsp oyster sauce
1 tbsp shaoxing wine
1/2 tsp pepper
1 tsp sesame oil
1 tbsp tapioca starch
2 tbsp water
2 tsp cooking oil

Gravy
3 tbsp oyster sauce
1 cup chicken stock
1 tbsp cornstarch

Method:
Knead the marinate except the oil, thoroughly into the sliced beef and when well mixed, add in the oil and knead again. Leave to marinate in the fridge for 30 minutes.

Loosen the fresh hor fun. (i would have to steam the hor fun before i could loosen it as it is quite stiff refrigerated.) (For the dried ones, steep in cold water)Heat wok until very hot, add in enough oil to grease the wok, over hot fire, fry a handful of the the hor fun . Add light and dark soya sauces and stir fry briskly. Allow noodles to burn a little at the edges to obtain a smaky taste. Put aside on a platter. Repeat with the rest of the hor fun.

Heat 1 cup oil and when it is hot, fry the beef by batches. Fry beef until 3/4 cooked.
Remove all the oil and leave 2 tbsp. Fry the ginger slices, then add in the beef and choy sum. Stir fry, then add in the gravy ingredients. Cook gravy thickens and pour over the noodles.
Serve hot.
