INGREDIENTS
1 small red onion, chopped
2 tbsp. apple cider vinegar
kosher salt
Freshly ground black pepper
16 1/2 oz. can cannellini beans, rinsed
1 avocado, diced
2 tbsp. Freshly Chopped Parsley
2 tbsp. extra-virgin olive oil
DIRECTIONS
- In a medium bowl, toss onion, vinegar, salt and pepper together, then let sit, tossing occasionally.
- Add beans, avocado, parsley, and olive oil to onions and toss to combine.
