S'mores Bars

3/4 cup of butter (1 1/2 sticks) room temperature
1/2 cup brown sugar
1 cup sugar*
2 large eggs*
2 tsp vanilla extract
2 2/3 cup all purpose flour
2 cups graham cracker crumbs*
2 tsp baking powder
1/2 tsp salt
3 giant sized milk chocolate bars (I used Hershey's)
1 7.5 oz jar of marshmallow fluff (or more if you want a thicker layer of marshmallow)

*Healthy Swaps: I used 3/4 cup of sugar as opposed to 1 full cup, egg whites instead of whole eggs (2 egg whites per egg called for), and I crushed Low Fat graham crackers for my graham cracker crumbs.

Preheat oven to 350 degrees. Grease a 13x9 inch baking pan.

In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a separate medium sized bowl whisk together flour, graham cracker crumbs, baking powder, and salt. Add to butter mixture and mix until combined (use low speed on electric mixer).

Divide dough in half. Press half of the dough into an even layer on the bottom of the prepared pan. Place the chocolate bars in a layer on top of the dough. I fit two giant Hershey bars side by side and then almost all of the third one, I had to take off one column of squares on the third Hershey bar and then laid it next to the other two. Whatever kind you use, if necessary break the chocolate to get it to fit in a single layer over the graham cracker. Spread marshmallow fluff over chocolate layer. Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough with your hands into small square shingles and laying them together).

Bake for 30-35 minutes until lightly browned. Cool completely before cutting into bars.

  1. Spreading the marshmallow fluff is such a pain! It's so sticky and there's no good way to spread them without getting it everywhere. There must be a better way. Also, I mis-measured the flour so the crust was too thick but they were still yummy!

    S'mores Brownies

    8-10 graham crackers
    1 box fudge brownie mix
    3 cups miniature marshmallows
    2/3 cup chopped peanuts (this is optional, I use cashews)
    1 cup semi-sweet or milk chocolate chips (I'm a semi-sweet gal)

    Place graham crackers in a single layer on the bottom of a greased 9x13 pan (I line my pan with foil to easy remove the brownies and cut them into squares). A couple of the graham crackers will need to be cut to fit and cover the bottom of the pan. Prepare brownie mix according to package directions (I always follow the instructions for cake like), then pour the batter over the graham crackers. Bake at 350 degrees for 25-30 minutes until a toothpick comes out clean. Remove the pan from the oven and top with the marshmallows and chocolate chips. Return the pan to the oven for 3 more minutes. Remove from oven and sprinkle with nuts inf desired. Cool before cutting into squares.

  3. S'more Cookie Bars

    Preheat oven to 375° and grease a 9×9 pan.
    Chop fancy chocolate bars to make about 1 1/2 cups of chocolate bits.
    Bash or food process about 8 graham crackers to make 1 Cup of crumbs.

    Mix 1 Cup of Graham Cracker Crumbs with 2 Cups (about 1/2 bag) of Betty Crocker Sugar Cookie Mix.
    Melt 1 stick of butter, stir in 1 tsp Pure Vanilla Extract, and add to dry ingredients.
    Press dough into pan and bake 18 minutes.

    When the cookie crust is done, turn off the oven and preheat the broiler.
    While the crust is still warm, sprinkle 1 1/2 cups chopped chocolate over top and let it melt. Spread melted chocolate to edges of crust.
    Top with 2 cups miniature marshmallows and return pan to oven about six inches below the broiler.
    Broil until marshmallows are lightly browned ~ 1 min (watch them carefully!)
    LET THEM COOL and cut into squares.

  4. Adapted the cookie bars recipe for my 9x13 pan:
    - used 1.5 cups of graham cracker crumbs
    - probably 2 1/3 cups of sugar cookie mix
    - 1 1/3 sticks of butter
    - 1.5 tsp of vanilla extract
    - then used enough chocolate chips and marshmellows to cover everything in the pan

    Watch the broiling part carefully! Browns in 2 minutes and will burn easily!
